Hearty turkey and vegetable stew
A comfort meal that’s gentle on the stomach, this stew is full of lean protein, vegetables & herbs
Ingredients
- 450g lean turkey mince
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 sweet potato, peeled and cubed
- 1 can diced tomatoes
- 4 cups low-sodium chicken or vegetable broth
- 2 teaspoons dried thyme
- 1 teaspoon dried rosemary
- 2 cups kale, stems removed and leaves chopped
- Salt and pepper to taste
This stew combines lean protein from turkey with a variety of vegetables and herbs. A comforting and balanced meal that’s gentle on the stomach and easy to digest.
Instructions:
- In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the turkey mince and cook until browned, breaking it up with a wooden spoon as it cooks. Remove the turkey from the pot and set aside.
- In the same pot, add the remaining olive oil, onion, carrots, celery and garlic. Sauté until the vegetables are softened, about 5 minutes.
- Return the turkey to the pot. Add the sweet potato, diced tomatoes with their juice, broth, thyme, rosemary, salt and pepper. Bring to a boil, then reduce heat and simmer, covered, for about 20 minutes, or until the sweet potato is tender.
- Stir in the kale and continue to simmer until the kale is wilted and tender, about 5 minutes.
- Adjust seasoning with salt and pepper and serve warm.
