One-pan salmon and vegetable bake
High-protein, easily digestible fish with high-fibre veg, to help ease constipation
Ingredients
- 2 salmon fillets
- 2 medium carrots, peeled and sliced
- 2 medium courgettes, sliced
- 1 medium sweet potato, peeled and cubed
- Extra virgin olive oil
- Dried herbs of your choice (e.g. thyme, rosemary, or oregano)
- Salt and pepper to taste
Easy weeknight meal you cook in just one pan. Perfect for cutting down the dishes. Salmon is a lean protein source that doesn’t normally cause bloating or gas, and vegetables like carrots and courgette are high in fibre, which can help with constipation.
Instructions:
- Preheat the oven to 200°C
- Toss the sliced carrots, courgette and cubed sweet potato with olive oil, salt, pepper and dried herbs until evenly coated.
- Spread the vegetables in a single layer on a large baking tray. Make space in the centre to place your salmon.
- Brush the salmon fillets with olive oil and season with salt, pepper and dried herbs. Place them in the centre of the tray surrounded by the vegetables.
- Bake in the preheated oven for 20-30 minutes, or until the salmon is thoroughly cooked and the vegetables are tender.
- Remove from the oven and let it rest for a few minutes before serving.
